Fontina and Gruyere cheeses have an earthy, nutty flavor to them so they combine nicely with mushrooms and veggies. They pair with 'earthy' spices like sage. They melt well and are great additions to mac & cheese and frittata dishes.

There's nothing like a good grilled cheese sandwich or bruschetta, either by itself or complimenting a soup. Of course "Best" is a matter of taste. The key for both sandwiches is to choose good quality breads and for GOODNESS' SAKE, choose a quality, hand-crafted cheese. Forgo the bland, cardboard-tasting junk you find in plastic pouches hung in the deli section.

Traditionally, for a good toasting an iron skillet with a lid is used at medium heat. You can grill them, fry them - and, as Johnny Depp illustrated - you can even iron 'em! Spread butter or olive oil on the side of the bread that'll be grilled. Some cooks opt for a thin coat of mayon- naise. Grate hard cheeses for a uniform melt. Tomatoes can be very liquidy in or on a sandwich - choose a meaty/paste variety like Roma, Sausage, and Rio Grande.

This simple food dates to the 15th century from central Italy.
